Preparation
Beat the chicken breasts so as to obtain the escalope.
After flouring them, place them in a pan to brown in butter, adding a pinch of salt.
Just before they are cooked, place a slice of mortadella over the chicken breast and cover with grated Parmigiano Reggiano.
Slowly complete the cooking adding the cream and placing the lid over the pan.
Chicken breast bolognaise

serves 6: • 6 chicken breasts • 150g of mortadella • 150g of Parmareggio 30-month old grated Parmigiano Reggiano • 50g of butter • 4 table spoons of cream • salt |
