Preparation
Dice part of the Tuscan bread and thinly slice the other part.
Cut the smoked pancetta and fry in a pan with a knob of butter and some extra-virgin olive oil.
Upon browning, remove the pancetta and brown the bread dices in its gravy to obtain crunchy croutons.
Meanwhile, cut the salad and place it in a bowl with the pancetta and the croutons; add the Parmareggio Parmigiano Reggiano slivers and dress with extra-virgin olive oil.
Pour the Parmareggio Cream Spread in a bowl to be placed in the middle of the plate and scatter the salad around with the slices of oven-toasted Tuscan bread.
