Parmareggio was founded in 1983 in Montecavolo di Quattro Castella, in the area Parmigiano Reggiano originated from, and became a world leader in the production and sale of Parmigiano Reggiano cheese over just a few years. Parmareggio seasons and packages Parmigiano Reggiano, packaging grated cheese and other cheeses in portions and in slices.
With two production plants in Modena and Montecavolo di Quattro Castella (RE) it is the reference company for the Parmigiano Reggiano market. Parmareggio is the heart of an integrated production and sale system headed by Granterre Group, founded over 50 years ago, which now leads the world’s sale of Parmigiano Reggiano cheese.
Controls
The quality of finished products depends on the quality of all the elements of the production chain, first of all, the quality of the raw material, associated to the quality of the production process (in compliance with hygiene standards) to obtain an end product that is safe for the consumers.

QUALITY CONTROL
Quality control activities cover all the production phases, from raw materials to packaged finished products. controls are carried out through product samples, which undergo laboratory analyses and hygiene inspections of the processing environment.

THE QUALITY SYSTEM OF THE BUTTER FACTORY
Laboratory
Controls are carried out throughout all the processing phases to verify the chemical, physical and microbiological composition as well as the organoleptic properties and to ensure the quality of raw materials, semi-finished and finished products.
The butter factory laboratory carries out over 73,000 analysis a year: raw material analysis, finished product analysis, process analysis, inspections, sanitation, etc.
The entire churning, food grading and packaging system is fully CIP washable.

Butter identification and traceability
Every pat of butter has a high degree of traceability thanks to the fully computerised traceability system, which allows tracing all the raw materials used and process parameters that have characterised every intermediate and finished product.
All finished products are identified through an alphanumeric code called Lot and by the date of minimum durability.

Technology
The closed-circuit technology, used both during the churning and packaging stages, allows eliminating risks of product and environment contamination.
